I had planned to make a quite delicious recipe but was unable to get one of the ingredients and then got pressed for time so I just threw in what I knew to be absolutely essential. I guess that's how new recipes must get invented.
4 6- to 7-ounce salmon fillets
3/4 cup breadcrumbs
3 tablespoons butter, melted
1 tsp. dried thyme
2 tsp. + 1 TBSP lemon juice
Recipe
Preheat oven to 375°F. Oil baking sheet. (I used my x-large cast iron skillet.) Sprinkle salmon with salt and pepper. Place skin side down on sheet. Combine breadcrumbs, melted butter, thyme, and lemon juice in medium bowl; blend well. Season with salt and pepper. Spoon onto salmon, dividing equally. Press to adhere. Drizzle with 1 TBSP lemon juice. Bake until topping is golden and salmon is just opaque in center, about 20 minutes.
