    Black Bean Dip

    List of Ingredients


    • 2 tbs olive or vegatable oil
    • 1/2 onion, chopped fine
    • 3 cloves garlic, minced.
    • 1 15 oz can of black beans, drained and coarsely mashed.
    • 1 tomato, chopped
    • 1 small can green chiles, drained. (optional)
    • 1/3 cup salsa, mild, medium or hot.
    • 1 1/4 cup shredded mexican style cheese
    • 4 tbs fresh cilantro leaves, chopped


    Instructions


    1. In a large skillet, heat oil and saute onion until transparent. Add garlic and saute briefly.

    2. Stir beans, tomato, salsa and chiles into the onion mixture. Heat through. Add cheese and stir until cheese melts. Remove from heat and add cilantro.

    3. Serve warm or room temperature, with chips.
