    Blue Cheese and Pesto Spread

    List of Ingredients


    • 8 oz. cream cheese, softened
    • 4 oz. crumbled blue cheese
    • 1/3 cup fresh parsley
    • 1/2 cup torn fresh spinach
    • 1/8 cup fresh basil leaves.
    • 1 clove garlic, minced
    • dash salt
    • 2 tablespoons olive oil
    • 1/2 cup grated parmesan cheese
    • 1/8 cup chopped pine nuts
    • 1/4 cup oil packed sun dried tomatoes, sliced.


    Instructions


    1. Mix cream cheese and blue cheese. set aside

    2. Process spinach, parsley, basil, garlic and salt until chopped fine. Add oil and blend. Stir in parmesan and pine nuts.

    3. Line a loaf pan with plastic wrap. Spred 1/2 cream cheese mix in pan.

    4. Place 1/2 of chopped tomatoes on top.

    5. Spread pesto over all, then top with remaining tomatoes.

    6. Top with cream cheese mixture, cover and chill until firm.

    7. Invert on a platter and serve with crackers or bread.
