Blue Cheese and Pesto Spread

- 8 oz. cream cheese, softened
- 4 oz. crumbled blue cheese
- 1/3 cup fresh parsley
- 1/2 cup torn fresh spinach
- 1/8 cup fresh basil leaves.
- 1 clove garlic, minced
- dash salt
- 2 tablespoons olive oil
- 1/2 cup grated parmesan cheese
- 1/8 cup chopped pine nuts
- 1/4 cup oil packed sun dried tomatoes, sliced.
Instructions
- Mix cream cheese and blue cheese. set aside
- Process spinach, parsley, basil, garlic and salt until chopped fine. Add oil and blend. Stir in parmesan and pine nuts.
- Line a loaf pan with plastic wrap. Spred 1/2 cream cheese mix in pan.
- Place 1/2 of chopped tomatoes on top.
- Spread pesto over all, then top with remaining tomatoes.
- Top with cream cheese mixture, cover and chill until firm.
- Invert on a platter and serve with crackers or bread.
