This bread is a healthy version of a family favorite. It will keep for days wrapped on the counter.
List of Ingredients
- 1/2 cup butter, softened
- 1 1/4 cup sugar
- 7 very ripe bananas, mashed
- 4 eggs, well beaten, or 1 cup egg substitute
- 2 cups flour
- 1 teas salt
- 2 teas baking soda
- 1 1/2 cups oatmeal
Instructions
- In food processer, cream butter and sugar until light.
- Add bananas and eggs and mix well.
- Sift flour with salt and baking soda. Mix with oats.
- Blend dry ingredients into batter, careful not to overmix.
- Bake at 350 for 45 to 50 minutes.
