    Recipe Introduction


    This bread is a healthy version of a family favorite. It will keep for days wrapped on the counter.


    List of Ingredients


    • 1/2 cup butter, softened
    • 1 1/4 cup sugar
    • 7 very ripe bananas, mashed
    • 4 eggs, well beaten, or 1 cup egg substitute
    • 2 cups flour
    • 1 teas salt
    • 2 teas baking soda
    • 1 1/2 cups oatmeal


    Instructions


    1. In food processer, cream butter and sugar until light.
    2. Add bananas and eggs and mix well.
    3. Sift flour with salt and baking soda. Mix with oats.
    4. Blend dry ingredients into batter, careful not to overmix.
    5. Bake at 350 for 45 to 50 minutes.
