Turkey Casserole

List of Ingredients
- 4 tbls. butter
- 4 tbls. flour
- 3 cups skim milk
- 1 lb. linguine
- 1/2 onion, chopped
- 3 cups cooked turkey.
- 1 1/2 cup shredded monterey jack cheese.
- Parmesan cheese
- salt and pepper
- 4 cloves minced garlic
Instructions
- Preheat oven to 400. Cook linguine to al dente stage.
- Melt butter and saute garlic and onion briefly. Add flour and cook on medium heat for one minute, stirring constantly.
- Add milk to roux and bring to a boil, whisking frequently. Reduce heat to low and add salt and pepper.
- In large bowl, mix linguine, turkey, and sauce. Pour into a large, greased casserole. Top with monterey jack cheese and bake 30 minutes.
- Serve with Parmesan cheese.
