A good vegetarian chili.
List of Ingredients
- One onion, chopped
- 4 cloves garlic, chopped
- 1 potato, diced
- 2 cans black beans, drained.
- 1 cup frozen corn
- 1 can diced tomatoes
- 1 tbls. vinegar
- 3-5 tbls. chili powder.
- 3 chipolte chilis, peeled and deveined.
Instructions
- Saute onion and garlic in saute pan. Add to crockpot.
- Add all other ingredients and cook on low 3 - 6 hours. (Or simmer in a stockpot for 45 minutes.)
Final Comments
Serve with warm corn tortillas, or tortilla chips. Top with cheese, onions, black olives and/or sour cream.
