    If you are in a hurry, you can fry these in a teaspoon of olive oil or butter, two or three minutes on each side. Or, bake at 375 degrees for about 15 minutes.


    List of Ingredients


    • About 14 oz. salmon, cooked or canned. (leftovers work best.)
    • 1 1/2 cup Panko (Japenese bread crumbs.) or fresh bread crumbs
    • 2 eggs
    • 1/4 cup green or white onion, diced
    • 1 teas parsley
    • 2 teas lemon or lime juice.
    • For the sauce:
    • 1/4 cup mayonaisse
    • 2-3 tbls dijon mustard
    • OR
    • 1/4 cup mayonaisse
    • 2-3 teas sweet pickle relish.


    Instructions


    1. Mix eggs with onion,lemon and spices.
    2. Add breadcrumbs. Add flaked salmon.
    3. Fry or bake and serve immediately with your choice of sauce.


    Final Comments


    This is a kid-friendly recipe. You can also add your choice of fresh or dried herbs for more flavor. Basil, dill, garlic, tarragon, etc.
