Recipe Introduction
If you are in a hurry, you can fry these in a teaspoon of olive oil or butter, two or three minutes on each side. Or, bake at 375 degrees for about 15 minutes.
List of Ingredients
- About 14 oz. salmon, cooked or canned. (leftovers work best.)
- 1 1/2 cup Panko (Japenese bread crumbs.) or fresh bread crumbs
- 2 eggs
- 1/4 cup green or white onion, diced
- 1 teas parsley
- 2 teas lemon or lime juice.
- For the sauce:
- 1/4 cup mayonaisse
- 2-3 tbls dijon mustard
- OR
- 1/4 cup mayonaisse
- 2-3 teas sweet pickle relish.
Instructions
- Mix eggs with onion,lemon and spices.
- Add breadcrumbs. Add flaked salmon.
- Fry or bake and serve immediately with your choice of sauce.
Final Comments
This is a kid-friendly recipe. You can also add your choice of fresh or dried herbs for more flavor. Basil, dill, garlic, tarragon, etc.
