    Salmon in cucumber sauce

    Great served chilled for a party, or hot as an entree.


    List of Ingredients


    • 1 large salmon filet - 3 or 4 lbs. (or 6 salmon steaks)
    • 3 tbls lemon juice
    • 3 tbls olive oil
    • 2 tbs fresh dill, chopped
    • salt and pepper
    • For the sauce:
    • 1 cup sour cream
    • 1/4 cup mayonaisse
    • 3 tsp fresh dill, chopped
    • fresh lemon juice to taste
    • 1 cup grated or finely chopped cucumber
    • pepper


    Instructions


    1. Preheat broiler to 550 degrees.
    2. Mix fish seasonings and spoon over fish. Marinate 30 minutes.
    3. Broil under high heat, 3 to 4 minutes per side, turning once.
      Chill for a few hours, or serve immediately, hot.
    4. Mix sauce and serve salmon on a platter, ringed with sauce and garnished with lemon slices and fresh dill.
