Garlic Lime Chicken

List of Ingredients
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne
- 1/4 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon thyme
- (or substitute Essence of Emeril for above spices, adding 1 teas of garlic powder to essence of emeril. )
- 4-6 boneless skinless chicken breast halves (pound if desired.)
- 2 tablespoons butter
- 2 tablespoons olive oil
- juice of a lime, or a small lemon
- 1/2 cup chicken broth
Instructions
- Mix spices on a dinner plate. Sprinkle on both sides of chicken breasts.
- Heat butter and oil in a skillet over medium high heat. Saute chicken until golden brown - about five minutes each side.
- Remove chicken to a warm plate.
- Add juice and broth to pan, and whisk with brown bits. Reduce sauce slightly.
- Add chicken back to the pan, check for doneness, coat with sauce and serve.
