    Creamy Asparagus Pasta

    Recipe Introduction


    A light Alfredo-style pasta. Add grilled chicken or cooked shrimp to make it a meal.


    List of Ingredients


    • 1/4 cup butter
    • 1 can of evaporated milk, regular or non-fat.
    • Juice of one lemon
    • 4 cups cooked al dente pasta (bowtie or spiral)
    • 12 asparagus spears
    • 1 large red bell pepper
    • Pepper
    • Parmesan Cheese (optional)


    Instructions


    1. Chop asparagus and red pepper into 1/4 inch slices. Mix in small bowl and microwave for three minutes on high. Rinse under cold water to stop cooking.
    2. Melt butter in saute pan add milk and pepper. Cook on low until warm.
    3. In a large bowl, pour in lemon juice. Toss with pasta and veggies. Add milk and stir. Top with parmesan.
