Creamy Asparagus Pasta

Recipe Introduction
A light Alfredo-style pasta. Add grilled chicken or cooked shrimp to make it a meal.
List of Ingredients
- 1/4 cup butter
- 1 can of evaporated milk, regular or non-fat.
- Juice of one lemon
- 4 cups cooked al dente pasta (bowtie or spiral)
- 12 asparagus spears
- 1 large red bell pepper
- Pepper
- Parmesan Cheese (optional)
Instructions
- Chop asparagus and red pepper into 1/4 inch slices. Mix in small bowl and microwave for three minutes on high. Rinse under cold water to stop cooking.
- Melt butter in saute pan add milk and pepper. Cook on low until warm.
- In a large bowl, pour in lemon juice. Toss with pasta and veggies. Add milk and stir. Top with parmesan.
