A lower fat version of Fettuccine Alfredo
List of Ingredients
- 1 lb. fettuccine
- 2 lg egg whites
- 3/4 cup nonfat riccotta
- 3/4 cup part-skim riccotta
- 1/2 cup plain nonfat yogurt
- 1/4 xup grated parmesan
- salt and pepper to taste
Instructions
- Cook pasta to al dente stage, drain and reserve 1/2 cup of cooking water.
- Blend all other ingredients and warm on low heat.
- Return pasta to pot and toss gently with cooking water and sauce.
