    A lower fat version of Fettuccine Alfredo


    List of Ingredients


    • 1 lb. fettuccine
    • 2 lg egg whites
    • 3/4 cup nonfat riccotta
    • 3/4 cup part-skim riccotta
    • 1/2 cup plain nonfat yogurt
    • 1/4 xup grated parmesan
    • salt and pepper to taste


    Instructions


    1. Cook pasta to al dente stage, drain and reserve 1/2 cup of cooking water.
    2. Blend all other ingredients and warm on low heat.
    3. Return pasta to pot and toss gently with cooking water and sauce.
