Red Pepper Scallops and Pasta

List of Ingredients
- 12 oz. Fettuccine
- 4 tablespoons butter
- 1/4 cup olive oil
- 3 red bell peppers, slivered
- 2 cloves garlic minced
- 1/2 teaspoon dried red pepper
- 3/4 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 pound medium scallops
- 1 cup sliced mushrooms (optional)
- 3/4 cup chopped parsley
- salt and pepper
- Parmesan cheese
Instructions
- Cook fettuccine, drain and set aside
- Heat butter and oil in a skillet. Add bell peppers, garlic and pepper flakes.
- Saute for one minute, remove peppers and set aside.
- Add broth and lemon juice to skillet and bring just to a boil.
- Add scallops and mushrooms, cover and simmer for five minutes, until scallops are opaque.
- Remove from heat, remove scallops and set aside.
- Toss fettuccine in skillet with broth and mushrooms to warm.
- Place on serving dish. Top with bell peppers, scallops and parsley.
- Serve with Parmesan cheese
