Chicken Piccata

List of Ingredients
- 1 c flour
- 6 boneless skinless chicken breast halves
- 3 tbls butter
- 2 tbls olive oil
- 4-6 cloves garlic, minced
- 1 c chicken broth
- juice of two medium lemons
- 1/2 lemon, sliced thin
- 4-6 tbls. capers, drained
- 2 tbls fresh parsley, flat leaf
Instructions
- Mix flour with salt and pepper in a large plastic bag
- Melt oil and butter in a very large skillet
- Shake chicken in flour and add to skillet.
- Cover, cook on medium, turning chicken until it is browned and cooked.
- Move chicken to warm platter and keep warm in 200 degree oven.
- In skillet, saute garlic for 10 seconds, scraping up browned bits.
- Add broth, lemon, lemon juice and capers to skillet and cook about 10 minutes to reduce.
- Add parsley to sauce and pour over chicken to serve.
