Indian Butter Chicken

- 1/3 cup butter
- 1 onion, minced
- 2 cloves garlic, minced
- 1 15 ounce can of tomato sauce
- 2 cups non-fat half and half
- 2 teas salt
- 1 teas cayenne pepper
- 1 teas garam masala
- 1 1/2 lbs boneless chicken breast, cubed
- 2 teas vegetable oil
- 2 teas tandoori masala (or curry powder)
Instructions
- Preheat oven to 375.Toss chicken with oil, season with tandoori masala or curry and bake about 12 minutes or until done.
- Melt 2 teas butter in a saucepan and saute onions and garlic. Cook until onion carmelizes to a light brown - 15 minutes.
- In a separate large saucepan, melt remaining butter and add all other ingredients. simmer for 30 minutes, then add onions.
- Add chicken to sauce and serve over rice.
