    List of Ingredients


    • 2 pounds boiling potatoes - Yukon Gold works best.
    • 1 medium white or yellow onion, chopped
    • 4 tablespoons Olive Oil
    • 2 tablespoons flour
    • 4 tablespoons chopped fresh parsley
    • 1 teaspoon ground nutmeg
    • salt and pepper to taste
    • juice of 1 lemon


    Instructions


    1. Chop potatoes into quarters, or eighths if they are large.
    2. Parboil potatoes for six minutes. Drain.
    3. Mix all remaining ingredients, except for lemon juice, in a large bowl.
    4. Toss potatoes with mixture and pour into a greased baking dish.
    5. Drizzle with a little more olive oil.
    6. Bake at 450 unitl nicely browned and tender, about 30 minutes.
    7. Top with lemon juice just before serving.
