Potatoes - Old French Style

List of Ingredients
- 2 pounds boiling potatoes - Yukon Gold works best.
- 1 medium white or yellow onion, chopped
- 4 tablespoons Olive Oil
- 2 tablespoons flour
- 4 tablespoons chopped fresh parsley
- 1 teaspoon ground nutmeg
- salt and pepper to taste
- juice of 1 lemon
Instructions
- Chop potatoes into quarters, or eighths if they are large.
- Parboil potatoes for six minutes. Drain.
- Mix all remaining ingredients, except for lemon juice, in a large bowl.
- Toss potatoes with mixture and pour into a greased baking dish.
- Drizzle with a little more olive oil.
- Bake at 450 unitl nicely browned and tender, about 30 minutes.
- Top with lemon juice just before serving.
