Roast Potatoes

Recipe Introduction
A great easy side dish to beef or chicken. Serves four to six.
List of Ingredients
- 2 1/2 pounds red potatoes
- 1/4 cup olive oil
- 3 tbls garlic powder
- 3 tbls dried tarragon (or thyme)
- 3 tbls dried basil
- 2 tbls paprika
- 1 medium onion(optional)
Instructions
- Preheat oven to 400 roast setting, or 450 bake setting.
Rinse potatoes,quarter, and cut into 1 to 2 inch wedges. Quarter and slice onion.
- In a large bowl, toss potatoes, olive oil, onion and spices.
- Spray a long cookie sheet with Pam. Spread potatoes and onions on the cookie sheet in a single layer.
- Cook for 30 minutes, or until potatoes are golden outside and tender inside.
- Season with salt and pepper and serve immediately.
Final Comments
Other spices can be used or substituted to taste - try parsley, celery seed, etc.
Or, toss potatoes with 2 tbls fresh lime or lemon juice after cooking, if you are serving with fish.
