Pork fried rice

Recipe Introduction
This can be served as a meal (just add more pork and spice), or a side dish. This recipe serves eight as a side dish, four to six as a meal.
List of Ingredients
- 2-3 pork chops, trimmed of fat
- 1/2 tsp cinnamon
- 1/2 tsp fennel seeds, crushed
- 1/2 tsp ground cloves
- 1/2 tsp ginger
- 2 cups white rice
- 6 eggs
- small onion, chopped fine
- 1 cup cooked peas
- vegatable oil
- soy sauce
Instructions
- Cook rice in 4 cups of boiling water. Cool in refrigerator.
- mix spices in a small bowl. Cut pork into 1/2 inch by 1/2 inch slices. Cook peas in microwave for six minutes.
- toss pork with spices. In a separate bowl, mix eggs slightly.
- Heat a large saucepan or wok on high heat. Add 1 teaspoon oil.
- Toss pork into pan and stir fry until done - about six minutes. Add onion about 3 minutes into cooking and stir fry.
- Remove pork and add a little oil. Stir fry scrambled eggs until soft. remove to a bowl.
- Add rice to pan and stir fry quickly. Add 2-3 tbls soy sauce. Toss in pork and eggs.
- Stir all until warm and serve immediately.
