Black Bean Salad

List of Ingredients
- 1 can black beans (drained)
- 1 cup frozen kernel corn
- 1 large red pepper, diced.
- 2 tomatoes, diced
- 1 bunch green onions, diced
- 1/2 cup cilantro (leaves - chopped)
- 1/2 cup olive oil
- 3/4 cup lime juice - fresh
- 2 tbls. sugar ( or splenda)
- 1 tsp. cumin
- 2 tsp. dijon mustard
- Pepper to taste.
Instructions
- Mix olive oil, lime juice, sugar, cumin, mustard and pepper.
- Toss all other ingredients and add dressing to serve.
