Recipe Introduction
An easy meal. Serve with cornbread and a light salad.
List of Ingredients
- one boiler-fryer chicken, cut up
- one onion, chopped
- one bay leaf
- two chicken bouilon cubes
- 3 medium red potatoes, chopped in 1/4 cubes.
- 2 medium carrots, chopped.
- 2 tbls. fresh parsley
- 2 cans cream style corn
- 2 tablespoons dillweed
- salt, pepper
Instructions
- Add chicken to a stockpot with six cups of water. Simmer for 45 minutes.
- Remove chicken, cool. Strain broth and skim fat. Remove chicken meat from bones, and chop.
- Boil broth, adding boullon carrot, and potatoes. Cook for 15 minutes or until potatoes are tender.
- Add chicken, spices and corn. Reduce to desired consistency, add chicken and serve.
Final Comments
If you like a smooth broth, blend with a hand-blender after step three.
