    List of Ingredients


    • 2 cans 14.5 oz. diced tomatoes
    • 1/2 cup chicken broth or water
    • 2 tbls olive oil
    • 1 seedless cucumber (or more) diced fine
    • 1 yellow bell pepper (or red) seeded and diced
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 2 tbls vinegar - balsamic, red wine or sherry
    • 2-4 tbls chopped cilantro or basil
    • salt and pepper to taste.


    Instructions


    1. blend 1 can of the tomatoes with broth and oil. mix in other ingredients, refrigerate and serve.
