List of Ingredients
- 2 cans 14.5 oz. diced tomatoes
- 1/2 cup chicken broth or water
- 2 tbls olive oil
- 1 seedless cucumber (or more) diced fine
- 1 yellow bell pepper (or red) seeded and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbls vinegar - balsamic, red wine or sherry
- 2-4 tbls chopped cilantro or basil
- salt and pepper to taste.
Instructions
- blend 1 can of the tomatoes with broth and oil. mix in other ingredients, refrigerate and serve.
