    • 1/2 cup chopped onion
    • 1 cup chopped red pepper/divided
    • 2 tbsp butter
    • 4 oz cream cheese, cubed
    • 1 can cream style corn
    • 2 cups chicken broth
    • 3/4 cup skim milk
    • 2 cups shredded cooked turkey


    Instructions


    1. Cook onion and 1/2 cup peppers in butter in a large saucepan. Reduce heat to low
    2. Add cream cheese and cook until melted, stirring constantly.
    3. Add corn,broth, milk and turkey. Cook until heated.
    4. Serve with 1/2 cup chopped pepper.


    Final Comments


    For a robust flavor, roast peppers and peel before adding to recipe.
