Turkey and Corn Soup

- 1/2 cup chopped onion
- 1 cup chopped red pepper/divided
- 2 tbsp butter
- 4 oz cream cheese, cubed
- 1 can cream style corn
- 2 cups chicken broth
- 3/4 cup skim milk
- 2 cups shredded cooked turkey
Instructions
- Cook onion and 1/2 cup peppers in butter in a large saucepan. Reduce heat to low
- Add cream cheese and cook until melted, stirring constantly.
- Add corn,broth, milk and turkey. Cook until heated.
- Serve with 1/2 cup chopped pepper.
Final Comments
For a robust flavor, roast peppers and peel before adding to recipe.
