Salmon Casserole

List of Ingredients
- 1/2 cup egg substitute
- 2 tbsp skim milk
- 6 1/2 oz can salmon, drained
- 1 cup nonfat cottage cheese
- 10 oz pkg frozen chopped broccoli, thawed and drained
- 3/4 tsp onion powder
- 1 large tomato, thinly sliced
- 1/2 cup shredded nonfat mozzarella cheese
- 1 tbsp grated nonfat Parmesan cheese
Instructions
- Combine egg substitute, skim milk, salmon, cottage cheese, broccoli and onion powder in a medium bowl and mix until ingredients are blended. Spray 9-inch pie plate with cooking spray; spoon mixture into pie plate. Cover and refrigerate up to several hours. Just before serving: Preheat oven to 350 degrees F. Bake casserole 25 to 30 minuntes. Top with tomato and cheeses. Bake an additional 10 to 15 minutes, until lightly browned. Remove from oven and let stand 5 minutes before serving. Casserole can also be baked, refrigerated and reheated if desired.
