List of Ingredients
- 1/2 cup onion, chopped
- 1 clove garlic, minced
- 1 TBSP vegetable oil
- 1 (16-oz.) can Italian-style stewed tomatoes, cut up
- 1 (8-oz.) can tomato sauce
- 1/3 cup water
- 1 tsp sugar
- 1 tsp oregano
- 1 tsp thyme
- 1/4 tsp salt
- 1 bay leaf
- 12 manicotti shells
- 2 eggs, beaten
- 1 and 1/2 cups fat-free cottage cheese
- 8-oz. (2 cups) reduced-fat mozzarella cheese, grated
- 1/4 cup Parmesan cheese
- 1/4 cup parsley
- dash pepper
Instructions
- Chop onion. Mince garlic. Grate mozzarella cheese. Cook manicotti shells according to package directions. Rince in cold water. Store in large pan of cold water until ready to use.
- In large saucepan, heat oil; add onion and garlic; cook until onion is softened. Stir in tomatoes, tomato sauce, water, sugar, oregano, thyme, salt and bay leaf. Bring to boil. Simmer, uncovered, for 45 minutes. In mixing bowl, combine eggs, cottage cheese, mozzarella cheese, Parmesan cheese, parsley and pepper. Drain manicotti shells. Spoon cheese mixture into manicotti. Pour half of tomato mixture into 13 x 9-inch baking dish. Place stuffed shells into pan; pour remaining sauce over top of shells. Cover with foil. Label and freeze.
- To serve: Thaw. Bake, covered, in 350 degree oven for 45 minutes or until hot and bubbly.
