    List of Ingredients


    • 1 lb. bulk pork sausage
    • 1 c. (4 oz.) shredded cheddar cheese
    • 1 c. (4 oz.) shredded Monterey Jack cheese
    • 1/2 c. finely chopped onion
    • 1 can (4 oz.) chopped green chilies
    • 1 T. minced jalepeno pepper,* optional
    • 10 eggs
    • 1 t. chili powder
    • 1 t. ground cumin
    • 1 t. salt
    • 1/2 t. garlic powder
    • 1/2 t. pepper


    Instructions


    1. In a large skillet, cook sausage until no longer pink; drain. Place in a greased 13X9X2-in. baking dish. Layer with cheeses, onion, chilies and jalepeno if desired.
    2. In a bowl, beat eggs and seasonings. Pour over cheese.
    3. Bake, uncovered, at 375 degrees for 18-22 minutes or until a knife inserted near the center comes out clean. Cool for 10 minutes; cut into 1-in. squares.

    Yield: aoubt 8 dozen. EDITOR'S NOTE: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.
