    Florentine "Lasagna"

    List of Ingredients


    • 1 lb. Italian sausage
    • 1/2 c. chopped onion (or 1 T. dried onion)
    • 1 clove garlic, minced
    • 2 cans (15 oz. each) tomato sauce
    • 1/2 t. seasoned salt
    • 1/2 t. basil
    • 1/2 t. oregano
    • 1 package (10 oz.) frozen chopped spinach, thawed and drained. Pat to dry.
    • 2 (15 oz. each) lo fat ricotta cheese
    • 1egg
    • 1 c. Parmesan cheese
    • salt and pepper to taste
    • 2 c. shredded Mozzerella or Monterey Jack cheese
    • 6 oz. twist macaroni


    Instructions


    1. In a large skillet, cook the sausge, onion & garlic until sausage is no longer pink. Drain and blot with paper towels.
    2. Stir in tomato sauce, seasoned salt, basil, oregano. Simmer 15 min., covered.
    3. In a medium bowl, combine the spinach, ricotta cheese, egg, Parmesan, salt, pepper. Set aside.
    4. Cook the macaroni as directed on the box. Drain.
    5. In large casserole, pour enough sauce to cover bottom. Add macaroni, then meat sauce, cover with cheese & spinach mixture. Sprinkle with mozarrela cheese. Cover with foil or lid.
    6. Bake at 375 degrees about 35 minutes. Let stand 5 minutes before serving.
