Florentine "Lasagna"

List of Ingredients
- 1 lb. Italian sausage
- 1/2 c. chopped onion (or 1 T. dried onion)
- 1 clove garlic, minced
- 2 cans (15 oz. each) tomato sauce
- 1/2 t. seasoned salt
- 1/2 t. basil
- 1/2 t. oregano
- 1 package (10 oz.) frozen chopped spinach, thawed and drained. Pat to dry.
- 2 (15 oz. each) lo fat ricotta cheese
- 1egg
- 1 c. Parmesan cheese
- salt and pepper to taste
- 2 c. shredded Mozzerella or Monterey Jack cheese
- 6 oz. twist macaroni
Instructions
- In a large skillet, cook the sausge, onion & garlic until sausage is no longer pink. Drain and blot with paper towels.
- Stir in tomato sauce, seasoned salt, basil, oregano. Simmer 15 min., covered.
- In a medium bowl, combine the spinach, ricotta cheese, egg, Parmesan, salt, pepper. Set aside.
- Cook the macaroni as directed on the box. Drain.
- In large casserole, pour enough sauce to cover bottom. Add macaroni, then meat sauce, cover with cheese & spinach mixture. Sprinkle with mozarrela cheese. Cover with foil or lid.
- Bake at 375 degrees about 35 minutes. Let stand 5 minutes before serving.
