Greek Meat Rolls in Tomato Wine Sauce

- 1 lb. ground beef or turkey
- 2 slices dry toast, crumbled
- 1 T. dried onion
- 1/4 t. garlic powder
- 1 egg, slightly beaten
- 1-1/2 t. sugar
- 1/2 t. salt
- 1/2 t. cumin
- 1/4 t. coarse ground pepper
- 3 T. cold water
- about 1/8 c. flour
- TOMATO-WINE SAUCE:
- 1 can (6 oz.) tomato paste
- 2-1/2 c. water
- 3/4 c. dry red wine
- 1-1/2 t. salt
- 1 t. cumin
Instructions
- Mix all ingredients except flour until well-blended amd firm. With hands moistened with cold water, shape rounded tablespoons of meat into 3" long fingers. Coat rolls lightly with flour. In frying pan heat 2 T. oil til hot and brown rolls a few at a time. With slotted spoon or spatula remove to paper towels to drain. Add to tomato-wine sauce*, cover and simmer 1 hr. Serve over rice.
- *TOMATO-WINE SAUCE: In saucepan whisk together tomato paste, water, dry red wine, salt & cumin til smooth.
