    Super-Easy Lasagna

    • 1 lb. ground beef or turkey
    • 32 oz. part-skim ricotta cheese
    • 1/2 c. grated Parmesan cheese
    • 2 eggs
    • 1 T. chopped parsley
    • 10 uncooked lasagna noodles
    • 1 package (16 oz.) part-skim mozzarella cheese, cut into slices
    • 4 c. prepared marinara sauce, divided


    Instructions


    1. Preheat oven to 375 degrees.
    2. In large skillet over high heat, cook beef, stirring until beef is brown and juices have evaporated, about 5 minutes. Add 3 cups marinara sauce and bring to a boil. Remove from heat.
    3. Meanwhile, in a medium bowl, stir together ricotta cheese, Parmesan cheese, eggs and parsley until well-blended.
    4. To assemble, in 13X9X2-in. baking dish, spread remaining 1 c. marinara sauce. Layer uncooked noodles, ricotta cheese mixture, meat-sauce and mozzarella cheese.
    5. Bake, covered, 45 minutes. Uncover; bake about 10 minutes until noodles are tender and top is bubbly and browned. Let stand 10 minutes.
