    • 2 @ 8-oz. chicken breasts, skinned, split & boned
    • 4 slices Monterey Jack cheese
    • 1 egg
    • 2 t. grated Parmesan cheese
    • 1 t. parsley
    • 1/2 t. instant chicken bullion granules
    • 2 T. all-purpose flour
    • 2 T. vegetable oil


    Instructions


    1. In thickest part of each chicken piece, cut a pocket just large enough for cheese slice. Place a cheese slice in each pocket.
    2. Beat together egg, parmesan cheese, parsley, bullion granules and dash pepper.
    3. Coat chicken with flour and dip in egg mixture, then dip back in flour; brown in hot oil 2 to 3 minutes on each side. Transfer to a 10X6X2-in. baking dish.
    4. Bake in a 375 degree oven for 8 to 10 minutes. Makes 4 servings.
