    List of Ingredients


    • 2-1/2 c. fresh bread crumbs
    • 4 garlic cloves, minced
    • 1/2 c. chopped fresh parsley
    • 6 T. grated Parmesan cheese
    • 1/4 c. chopped fresh thyme or 1 T. dried thyme
    • 2 t. grated lemon peel
    • 1/2 t. salt
    • 6 T. butter or margarine, melted, divided
    • 1 salmon fillet (3 to 4 pounds)


    Instructions


    1. In a bowl, combine bread crumbs, garlic, parsley, cheese, thyme, lemon peel and salt; mix well. Add 4 T. butter and toss lightly to coat; set aside.
    2. Pat salmon dry. Place skin side down in a greased baking dish. Brush with remaining butter; cover with crumb mixture.
    3. Bake at 350 degrees for 20-25 minutes or until salmon flakes easily with a fork.
