Lemon Herbed Salmon

List of Ingredients
- 2-1/2 c. fresh bread crumbs
- 4 garlic cloves, minced
- 1/2 c. chopped fresh parsley
- 6 T. grated Parmesan cheese
- 1/4 c. chopped fresh thyme or 1 T. dried thyme
- 2 t. grated lemon peel
- 1/2 t. salt
- 6 T. butter or margarine, melted, divided
- 1 salmon fillet (3 to 4 pounds)
Instructions
- In a bowl, combine bread crumbs, garlic, parsley, cheese, thyme, lemon peel and salt; mix well. Add 4 T. butter and toss lightly to coat; set aside.
- Pat salmon dry. Place skin side down in a greased baking dish. Brush with remaining butter; cover with crumb mixture.
- Bake at 350 degrees for 20-25 minutes or until salmon flakes easily with a fork.
