    List of Ingredients


    • 1-2/3 c. all-purpose flour
    • 1/3 c. cornmeal
    • 1/4 c. sugar
    • 2 t. baking powder
    • 1 to 2 t. ground mustard
    • 1/2 t. salt
    • 1/2 t. baking soda
    • 1/8 t. ground cloves
    • 2 eggs
    • 1 c. buttermilk
    • 1/3 c. vegetable oil
    • 3 T. Dijon mustard
    • 1 c. finely chopped fully cooked ham


    Instructions


    1. In a bowl, combine the first 8 ingredients.
    2. Combine the eggs, buttermilk, oil and mustard; stir into dry ingredients just until moistened.
    3. Fold in the ham.
    4. Fill greased or paper-lined muffin cups three-fourths full.
    5. Bake at 375 degrees for 20-25 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
