Dijon Ham Muffins

List of Ingredients
- 1-2/3 c. all-purpose flour
- 1/3 c. cornmeal
- 1/4 c. sugar
- 2 t. baking powder
- 1 to 2 t. ground mustard
- 1/2 t. salt
- 1/2 t. baking soda
- 1/8 t. ground cloves
- 2 eggs
- 1 c. buttermilk
- 1/3 c. vegetable oil
- 3 T. Dijon mustard
- 1 c. finely chopped fully cooked ham
Instructions
- In a bowl, combine the first 8 ingredients.
- Combine the eggs, buttermilk, oil and mustard; stir into dry ingredients just until moistened.
- Fold in the ham.
- Fill greased or paper-lined muffin cups three-fourths full.
- Bake at 375 degrees for 20-25 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
