List of Ingredients
- 1 lb. carrots (can use baby carrots also)
- 1-1/2 T. butter or margarine
- 1/4 c. slivered almonds
- 1 T. sugar
- 1/8 t. coriander
- 1/8 t. cinnamon
- 1/4 t. cumin
- pinch of cayenne pepper (optional)
- salt
Instructions
- Slice peeled carrots (or use baby carrots whole) & cook in boiling water til tender. Drain.
- Melt butter in pot; add almonds and cook over medium-low heat, stirring until light-gold, about 3 minutes. Add carrots and remaining ingredients. Cook, stirring over low heat til carrots are glazed, about 3-5 minutes.
