Beef Enchilada Pie

- 1 lb. ground beef
- 3 cups Cheddar cheese, grated
- One 4-1/2 oz. can olives, chopped
- 1 onion, chopped
- 10 Mission® corn tortillas
- Two 10-oz. cans enchilada sauce
Instructions
- Brown ground beef; drain. Set aside some olives for garnish.
- In a large bowl, combined chopped onion, remainder of olives, 2-1/2 cups grated Cheddar cheese and 1 can enchilada sauce. Add the cooked ground beef.
- Cover the bottom of a 9"x13" pan with 5 tortillas. Spoon meat mixture over tortillas. Place remaining 5 tortillas on top of meat mixture.
- Pour the second can of enchilada sauce over the top layer of tortillas and top with the remaining Cheddar cheese.
- Bake, uncovered, at 350º for 20 minutes. Garnish with reserved olives.
