Mexican Chicken Casserole

List of Ingredients
- 1 to 3 lbs. of chicken, cooked and shredded
- 1 cup chopped onions
- 2 4-oz. cans mild green chilies
- 2 tablespoons oil
- 1 12-oz. can enchilada sauce
- 1 cup chicken broth
- 1 cup sour cream
- 2 cups grated Monterey Jack cheese
- 12 corn tortillas
- 1 cup grated Cheddar cheese
Instructions
- Saute onions and chilies in oil until soft.
- Add sour cream, broth, Monterey Jack cheese and enchilada sauce. (Stir until cheese is melted).
- Add chicken.
- Grease a 3-quart casserole dish. Put a layer of tortillas in the bottom of the dish.
- Spoon chicken mixture over tortillas. Sprinkle Cheddar cheese over chicken mixture.
- Continue layers (tortillas, chicken mixture, Cheddar cheese). Top with Cheddar cheese.
- Bake uncovered at 300 degrees until bubbly.
