Italian Sausage Stew

List of Ingredients
- 2 lb. Italian sausage rope, cut into 1-inch pieces (either hot or sweet, according to your preference)
- 1-2 tablespoons oil
- 2 6-oz. cans tomato paste
- About 10 cups water
- 8 small potatoes, peeled and cut into chunks
- 2 16-oz. cans French-style green beans, drained
- Salt and pepper to taste
Instructions
- Brown sausage with oil in Dutch oven. Remove sausage from Dutch oven.
- Add tomato paste and water along with salt and pepper to Dutch oven. Bring to a boil and allow paste to dissolve.
- Add sausage back in, and add potatoes. Allow to cook until potatoes are tender and sauce begins to thicken (at least an hour.)
- Not long before serving, add beans. Heat through.
- Serve with Italian bread and salad.
