    Zucchini Stuffing Casserole

    Wonderful addition to any poultry meal


    List of Ingredients


    • 4 medium zucchini
    • 3/4 c. shredded carrots
    • 1/2 c. onions,chopped
    • 6 tbspn. butter
    • 2 1/4 c. herb stuffing cubes
    • 1 c. cream of celery or mushroom soup
    • 1/2c. sour cream


    Instructions


    1. Preheat oven @ 350
    2. Cook zucchini til tender
    3. Drain
    4. Saute onions,and carrots in 4 tbsp. butter
    5. Remove from heat.
    6. Stir in 1 1/2 c.of cube stuffing,soup,sour cream.
    7. Gently stir in cooked zucchini.
    8. In a 1 Qt. casserole dish ( lightly greased) cover bottom with zucchini mixture.

    9. Top with remaining stuffing cubes.
    10. Drizzle with remaining melted butter.
    11. Bake 30-40 minutes.
      Serves 6-8
