Zucchini Stuffing Casserole

List of Ingredients
- 4 medium zucchini
- 3/4 c. shredded carrots
- 1/2 c. onions,chopped
- 6 tbspn. butter
- 2 1/4 c. herb stuffing cubes
- 1 c. cream of celery or mushroom soup
- 1/2c. sour cream
Instructions
- Preheat oven @ 350
- Cook zucchini til tender
- Drain
- Saute onions,and carrots in 4 tbsp. butter
- Remove from heat.
- Stir in 1 1/2 c.of cube stuffing,soup,sour cream.
- Gently stir in cooked zucchini.
- In a 1 Qt. casserole dish ( lightly greased) cover bottom with zucchini mixture.
- Top with remaining stuffing cubes.
- Drizzle with remaining melted butter.
- Bake 30-40 minutes.
Serves 6-8
