Cream of Cauliflower Soup

Recipe Introduction
Deliciously creamy, hearty soup!
List of Ingredients
- 1 large cauliflower; seperated into florets
- 2 sm.onions,diced
- 5 med.potatoes,peeled,diced
- 5 stalks of celery,diced
- 3 c. milk
- 1c. water
- 1 tsp.salt
- 1/4 tsp. pepper
- 1c.heavy cream
- 1c.sour cream
- 1/2c.white wine(optional)*
- 1 tbsp. butter or margerine
Instructions
- Blanch florets in salted water for 5 minutes.
- Rinse
- Saute onions and cauliflower in margerine in large kettle until tender
- Add diced potatoes and celery to kettle.
- Stir in milk,water,salt,pepper
- Take half of vegetable mixture and blend it in blender til well blended
- Return blended mixture to kettle with the remaining mixture
- Stir in sour cream,heavy cream and wine*
- Stir over low heat until hot
Final Comments
This is an excellent soup for a winter night or anytime.
