    Cream of Cauliflower Soup

    Deliciously creamy, hearty soup!


    List of Ingredients


    • 1 large cauliflower; seperated into florets
    • 2 sm.onions,diced
    • 5 med.potatoes,peeled,diced
    • 5 stalks of celery,diced
    • 3 c. milk
    • 1c. water
    • 1 tsp.salt
    • 1/4 tsp. pepper
    • 1c.heavy cream
    • 1c.sour cream
    • 1/2c.white wine(optional)*
    • 1 tbsp. butter or margerine


    Instructions


    1. Blanch florets in salted water for 5 minutes.
    2. Rinse
    3. Saute onions and cauliflower in margerine in large kettle until tender
    4. Add diced potatoes and celery to kettle.
    5. Stir in milk,water,salt,pepper
    6. Take half of vegetable mixture and blend it in blender til well blended

    7. Return blended mixture to kettle with the remaining mixture
    8. Stir in sour cream,heavy cream and wine*
    9. Stir over low heat until hot


    Final Comments


    This is an excellent soup for a winter night or anytime.
