Ham and Cheese Pie with Cheese Crust
I think I would also put a few diced potatoes in this.
Ham And Cheese Pie With Cheese Crust - Kid Approved
2 tablespoons butter
1/2 cup chopped green pepper
1/2 cup celery, diced
1/4 cup flour
1 1/4 cups beef stock
3/4 cup rich milk
2 cups diced, cooked ham
2 tablespoons chopped pimiento
salt and pepper
1/2 package frozen green peas, uncooked
Saute green pepper and celery in fat until tender but not browned.
Blend in
flour. slowly add stock and the milk. Cook over low heat, stirring
constantly, until sauce is thickened. Fold in remaining ingredients.
Ladle
mixture into a shallow 8 inch casserole or 4 individual casseroles.
Cover
with:
Cheese Crust
1 1/2 cups flour
1/2 cup shortening
1/2 teaspoon salt
dash cayenne
3/4 cup grated sharp cheese
3/4 tablespoon ice water
Sift flour with salt and cayenne. Cut in shortening until mixture is
like
coarse corn meal; lightly mix in grated cheese. Stir with fork and
gradually add just enough ice water to moisten. Pat dough gently into
a
ball. Roll out 1/8 inch thick on lightly floured board. Fit crust
into
large or small casseroles. Cover, seal and freeze. Use ovenware
baking
dishes which may go directly from your freezer into a 425° oven. Bake
the
small dishes about 45 minutes and the large dishes 1 1/4 hours. Reduce
oven
temperature for latter half of baking period if crust becomes too
brown.
