    Swiss Steak Ole'


    1/2 to 3/4 pound boneless round steak 3/4" thick
    2 tablespoons flour
    1/2 teaspoon salt
    1/4 cup chopped celery
    1/4 cup chopped carrots
    10 oz can stewed tomatoes
    1 tablespoon chopped onions
    2 jars salsa (any type; as hot as you like)
    1 cup shredded cheese (monterey jack, if desired)

    Cut meat into 2 portions. Mix flour and salt, pound into meat. Set aside
    remaining flour. Brown
    meat in small amount of hot oil.

    Place meat in shallow baking dish. Blend reserved flour mixture into
    drippings in skillet. Add
    tomatoes, celery, carrots and onions.

    Cook stirring constantly til mixture boils. Pour over meat. Add salsa.
    Cover and Bake in 350 F
    oven for 1 hour or until meat is tender.

    Sprinkle cheese over meat and melt. Serve with hot mashed potatoes,
    cooked vegetables, biscuits
    and a tossed salad.
