    Barb's Crunchy Chili Cheese Chicken

    I made up this recipe and I think it's good. However, it is best when eaten hot. Let me know how you like it.


    6 chicken breasts (boneless and skinless)

    2 C. Chili Cheese flavored corn chips

    18 saltine crackers

    2 T. sour cream

    3 T. milk

    1/4 tsp. salt

    1/8 tsp. pepper

    Pound chicken breasts really thin between 2 pieces of wax paper. Put corn chips in bag and with rolling pin, crush really fine. Put those into a bowl. Now put crackers into same bag and roll them, but not quite as fine. Put those into bowl with crushed corn chips.

    In a second bowl mix the sour cream, milk, salt, and pepper.

    Dip flattened breasts into sour cream mixture and then into crumb mixture. Fry in hot oil at 375º for about 4 or 5 minutes. Turn a couple of times while frying. Drain on paper towels and then enjoy!!

    I think it would also be good with chicken strips that you pound thin or cut the chicken into squares for nuggets. The time would be different on those. It is basically done when it floats.
