    Midget Cream Puffs

    These are really good! I have made them for a lot of years, and everyone always loves them. Hope you enjoy them too.
    1 C. hot water

    1/2 C. butter

    1/4 tsp. salt

    1/2 C. cornmeal

    3/4 C. flour

    4 eggs

    Combine water, butter and salt in pan, and bring to a boil. Quickly stir in corn meal and flour and stir vigorously over low heat for 1 1/2 to 2 minutes, or until mixture can be formed into a ball in the center of the pan. Transfer to bowl, add eggs one at a time, beating well after each one. Beat for 1 minute after last egg has been well combined. Drop by rounded teaspoon onto ungreased cookie sheet, leaving at least 1 1/2 " between each. Bake at 400º for 20 to 25 minutes. Remove and cool. Slice in half and add chicken salad, ham salad, turkey salad, or tuna salad. Yield: 46 small cream puffs
