List of Ingredients
- 5 egg substitute equivalents
- 1/2 C.skim milk
- 1/2 C. flour
- 1 T vanilla extract
- 1 1/2 C. Strawberries
- 1 C. Blueberries
- 1 medium Banana
- 1 T Lemon Juice
Instructions
- Preheat the oven to 425*
- Spray the bottom of a pie plate or oven proof skillet with non stick cooking spray (butter flavor is nice)
- In a large bowl combine eggs and milk. Add the flour and vanilla.
- Pour batter into the prepared pan and place it in the oven
- Bake for 15-20 minutes until batter is puffed and edges are browned
- While the Puff Pancake is cooking slice strawberries & bananas toss w/ lemon juice mix in blueberries & splenda
- Remove the puff pancake,fill the cener with fruit, cut into wedges and serve
