Recipe Introduction
I love Lo Mein but it can be soo high in points! Here is a healthy alternative without losing any of the flavor
List of Ingredients
- 1 c. plus 2 T chicken broth
- 2 cloves garlic minced
- 1/4 c. sliced scallions
- 2 tsp grated fresh ginger
- 2 carrots peeled and cut into into 1/4 in slices
- 3 celery stalks cut into 1/4 " slices
- 1/2 c. mushrooms
- 1 1/2 c. broccoli
- 2 T dry sherry
- 1 T light soy sauce
- 1/2 lbs cooked thin spaghetti (whole wheat if you want to make this core)
Instructions
- In a large skillet or wok, heat 2 T broth add garlic, scallions,and ginger stir fry for 30 seconds
- Add carrots, celery and mushrooms and stir fry for5 minutes
- Add broccoli and 1/2 c. broth cover and steam for 5 min
- In small bowl mix remaining broth, sherry and soy sauce
- Remove cover and cook 1more min.
- Toss in cooked noodles and mix well
