    Recipe Introduction


    This creole sauce is really versatile -- you can add chicken cubes, lobster chunks, mussels or clams instead of shrimp. Remember to buy 1 lb of shrimp, total weight (with shells on)


    List of Ingredients


    • 8oz tomato sauce
    • 1/2 c. sliced mushrooms
    • 4oz dry white wine or chicken broth
    • 1/2 c. chopped onion
    • 2 garlic cloves minced
    • 1/2 c. chopped celery
    • 2 bay leaves
    • 1/4tsp cayene pepper
    • 1 lb shrimp, peeled and deveined
    • 2 C. cooked rice, hot (white or brown)
    • 1 green pepper diced


    Instructions


    1. In a large skillet, combine the tomato sauce, mushrooms, wine, onion, green pepper, clelery,bay leaves and cayenne pepper.
    2. Bring to a boil; cover, reduce hte heat and let simmer for 10 to 15 minutes
    3. Add the shrimp tothe tomato sauce and cook uncovered for 3-5 minutes, until the shromp are bright pink
    4. To serve, spread the rice on a platter and spoon the shrimp and sauce over the rice

    4 servings 1/2 c. rice 2-3oz shrimp Totally CORE if made with chicken broth instead of wine and served with brown rice 213 cal/1g fat/2 g fiber 4 points each serving
