Recipe Introduction
I found this cookbook at a garage sale and it is awesome all the recipes sound soo good I am posting ones that I plan on using!
List of Ingredients
- 2 Cups ooked Chicken, diced
- 1 C. finely chopped celery
- 1/4 C. crushed unsweetened pineapple, drained
- 2 8oz cans water chestunts, drained and chopped
- 2 Scallions chopped
- 1/4 C. Low Fat Mayo
- 1 T. lite soy sauce
- 1tsp lemon juice
- 8 large tomatoes, hollowed
Instructions
- In a large bowl, combine the chicken, pineapple, celery, water chestnuts and scallions
- In a separate bowl, combine the mayo, soy sauce and lemon juice, mix well
- Add the dressing to the chicken mixture and toss.
- Cover and refrigerate for 2-3 hours
- For each serving place a small scoop (3-4oz) of chicken salad in the hollowed out tomato
