    Chili seems to be a big family favorite, so I thought we could dedicate an entire section to our various chili recipes.

    List of Ingredients




    1 lb. ground beef
    diced onions to taste
    garlic salt to taste
    chili powder -- lots of it
    1 can tomato juice
    1 can chili beans
    1 can kidney beans
    hot pepper sauce
    2 jalepeno peppers

    For chili nachos:
    tortilla chips
    shredded cheddar cheese

    Recipe



    Brown ground beef. Add onions and jalepeno peppers as the beef cooks, sauteeing them in the juices from the meat. Add garlic salt. Drain. Add tomato juice and beans. Stir. Add hot pepper sauce and chili powder in small quantities, tasting as you go, until it tastes right to you (No 2 chilis will taste the same). Simmer until hot. You can eat this as soon as it's hot, but it tastes better if you cook it for a long time, and is even better as left-overs.

    Speaking of left-over, I often use my left-over chili to make chili nachos. Place a single layer of tortilla chips on a microwave safe plate, spoon chili over chips, and sprinkle with shredded cheddar cheese. Microwave until cheese is melted. Enjoy!!
