    • 2-2 1/2 c. cooked chicken, cut into large chunks
    • 1 c. sliced celery
    • 2 tsp. finely chopped onion
    • 1 1/2 c. cooked rice (volume before cooking)
    • 1/2 c. walnuts
    • 1 (10 1/2 oz.) can cream of chicken soup
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • 1 Tbsp. lemon juice
    • 1/4 c. water
    • 3/4 c. mayonnaise
    • 3 hard-cooked eggs,sliced
    • 2 c. crushed potatoe chips


    Instructions


    1. In a large bowl combine: diced chicken, celery, onion, rice, walnuts, salt, pepper, lemon juice and soup.
    2. Mix the mayonnaise with water and add to chicken mixture.
    3. Turn half the mixture into a greased 9-inch square pan.
    4. Layer sliced eggs, add rest of chicken mixture.
    5. Top with crushed potatoe chips.
    6. Bake at 450 degrees for 15 minutes or until mixture is bubbly.
    7. Casserole may be assembled early in the morning and refrigerated until needed.When this is done, add extra 5-10 minutes to the cooking time.
