Chicken Casserole

- 2-2 1/2 c. cooked chicken, cut into large chunks
- 1 c. sliced celery
- 2 tsp. finely chopped onion
- 1 1/2 c. cooked rice (volume before cooking)
- 1/2 c. walnuts
- 1 (10 1/2 oz.) can cream of chicken soup
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. lemon juice
- 1/4 c. water
- 3/4 c. mayonnaise
- 3 hard-cooked eggs,sliced
- 2 c. crushed potatoe chips
Instructions
- In a large bowl combine: diced chicken, celery, onion, rice, walnuts, salt, pepper, lemon juice and soup.
- Mix the mayonnaise with water and add to chicken mixture.
- Turn half the mixture into a greased 9-inch square pan.
- Layer sliced eggs, add rest of chicken mixture.
- Top with crushed potatoe chips.
- Bake at 450 degrees for 15 minutes or until mixture is bubbly.
- Casserole may be assembled early in the morning and refrigerated until needed.When this is done, add extra 5-10 minutes to the cooking time.
