This is a favorite of mine from my childhood. Scott's teacher had each child bring in some family favorites and they made a cookbook.
List of Ingredients
Chow Mein Noodle Hotdish
1 ½ lbs ground beef
1 ½ cup diced celery
1 med-large onion diced
1 can each tomato soup and cream of mushroom soup
1 can mushrooms
2 - 2 1/2 cups chow mein noodles ( or as much as you wish)
½ cup cashews – opt.
Recipe
Preheat oven to 350 degrees. Spray a large casserole with cooking spray.
Brown ground beef with celery and onion. Drain fat (I rinse mine with hot water to get the most fat off).
After browning, add the soups, mushrooms (undrained), and about 1 ½ to 2 cups of the chow mein noodles. Put in the casserole dish. Bake for 30 minutes. After 30 minutes, top with the remaining noodles and the cashews if desired. Bake another 10 minutes.
Makes a bunch.
