Thai Noodles and Snow Peas
This recipe is from Taste of Home's Cooking School's Fall Recipe Collection. I went to the cooking school and had a great time.
List of Ingredients
- 1/3 c rice vinegar
- 1/2 c honey
- 2 T peanut butter
- 2 T soy sauce
- 2 T vegetable oil
- 1 T sesame oil
- 2 garlic cloves, minced
- 1/4 t crushed red pepper flakes
- 1/4 t ground ginger
- 1 15 oz package extra-firm tofu, drained, pressed, and cut into 1/2 inch pcs OR
- 1 lb boneless, skinless chicken breast cut into 1/2 inc pcs
- 1- 9 oz pkg fresh Asian style noodles
- 4 oz snow peas, trimmed and diagonally cut
- 1/4 c chopped fresh cilantro or parsley
Instructions
- In a medium bowl, combine the first nine ingredients. Add tofu or chicken; marinate for 30 minutes. Cook noodles and snow peas in 3 qts boiling water for 1- 2 minutes or until snow peas are crisp-tender. Rinsewith cold water; drain. Place in a large bow;add tofu and marinade. Toss gently to coat. Add cilantro; toss to coat.
- 4-6 servings
Final Comments
1 pkg 8 oz dry fettuccini, linguine or spaghetti may be substituted for Asian style noodles. Prepare according to package directions. Add snow peas during last 2-3 minutes of cooking
