carrot and orange soup
List of Ingredients
1 pound of carrots
4 large oranges
2 pints of water
1 vegetable stock cube
1 onion
4 ounces of cheese(crumbly works best)
salt
pepperRecipe
peel and finely chop the onion and the carrots place in a pan with 2 pints of liquid and boil until tender
cut the oranges in half and remove juice and flesh
add this and the stock cube to the carrot and onion boil for another 5 mins
leave to cool for 30 mins
pour into a food processor and blend until smooth
put back into pan,season to taste and reheat thoroughly
just before serving sprinkle the cheese into it
garnish with a few strips of grated orange zest
