Dill Pickles
An easy Dill Pickle recipe that does not require processing. Especially enjoyed by my sons Craig and Todd.
List of Ingredients
- 24, 3-4" pickling cukes
- Fresh Dill
- 1, red pepper sliced into thin strips
- 1or 2, bulbs of garlic
- pickling spice
- alum
- coarse (pickling) salt
- pickling vinegar
Instructions
- Gently wash pickling cukes and let stand in ice-water.
- Thoroughly wash and sterilize 1-quart canning jars.
- Bring to a boil 1 cup pickling vinegar; 2 cups water; 1/4 cup pickling salt.
- To each jar add 1 head of dill; 1 clove garlic; 1 slice red pepper; 1 tsp. pickling spice; pinch of alum.
- Fill jars loosely with cukes and pour in boiling vinegar to the top. Seal and allow to cool.
- These will seal on their own without needing to be processed in a boiling water bath.
Final Comments
If made in August they are good by Thanksgiving and perfect for Christmas! If they don't seal - simply pour liquid out and reboil and try again.
