    Dill Pickles

An easy Dill Pickle recipe that does not require processing. Especially enjoyed by my sons Craig and Todd.

    List of Ingredients

    • 24, 3-4" pickling cukes
    • Fresh Dill
    • 1, red pepper sliced into thin strips
    • 1or 2, bulbs of garlic
    • pickling spice
    • alum
    • coarse (pickling) salt
    • pickling vinegar

    Instructions

    1. Gently wash pickling cukes and let stand in ice-water.
    2. Thoroughly wash and sterilize 1-quart canning jars.
    3. Bring to a boil 1 cup pickling vinegar; 2 cups water; 1/4 cup pickling salt.
    4. To each jar add 1 head of dill; 1 clove garlic; 1 slice red pepper; 1 tsp. pickling spice; pinch of alum.
    5. Fill jars loosely with cukes and pour in boiling vinegar to the top. Seal and allow to cool.
    6. These will seal on their own without needing to be processed in a boiling water bath.

    Final Comments

If made in August they are good by Thanksgiving and perfect for Christmas! If they don't seal - simply pour liquid out and reboil and try again.
